Since so many of you asked for it, here is the recipe for the Chocolate Orange Muffins from the previous post.
As I mentioned in the previous post, I love the combination of chocolate and orange, and am forever looking to bake both into a cake(or muffins). I go around browsing for interesting recipes and reach all sorts of pages, and sometimes the recipes are absolutely wonderful. So when I came across this, I was delighted! I used the base recipe, and made a few modifications based on the comments at the recipe, and we loved the end result.
Chocolate Orange Muffins
Ingredients
- 2 cups all-purpose flour
- 1 ounce chocolate chips
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 6 tablespoons margarine, softened
- 3/4 cup white sugar
- 2 eggs
- zest of 2 oranges
- 1/4 cup orange juice
- 1/2 cup fat free yogurt
- Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 12 cup muffin pan, or line with paper liners(I use paper liners – the ready made ones we get at supermarkets).
- In a medium bowl, mix flour, chocolate chips, baking powder, baking soda, and salt.
- In a separate medium bowl, cream together margarine and sugar until smooth. Beat in the eggs one at a time then stir in the orange zest, orange juice, and yogurt. Pour into the flour mixture, and mix just until evenly moist. Spoon batter into muffin cups.
- Bake for 15 to 20 minutes in the preheated oven, or until a toothpick inserted into the center of a muffin comes out clean. Let muffins cool in the pan on a wire rack for at least 10 minutes before removing from the pan.
I used the zest of 2 oranges because some of the comments said that the orange flavour was not strong with the amount mentioned in the original recipe. I had two oranges, so decided to use both. So you could probably vary the amount based on how strong an ‘orange’ flavour you want. I used yogurt instead of buttermilk, because I did not have any at home. And chocolate chips, because I was too lazy to grate chocolates as the original recipe demands.
Do let me know if you guys do try it at home. I want to try replacing all-purpose flour with wholemeal next, and then the margarine with oil.

Make it without the orange then – try replacing otrange zest with vanilla essence 🙂 Am sure it will still taste yum! Tell me your fav flavour – and I will make it with the substitution and try 🙂

U used curd in the muffins,i never used curd in the cakes,was having doubt.Now will try to bake cake with curd.Bookmarked ur recipe 🙂
I use curd in cakes, quite a bit. Whenever the recipe asks for sour cream/buttermilk – I use fat-free yogurt. I used it in this cake as well – https://wordsndreamz.wordpress.com/2009/08/16/when-in-despair/.
Give it a try, Sari. In case you don’t like orange, you could use vanilla flavouring instead.

Yes, Deeps – I use fat-free yogurt as a subsitute for sour cream as well as buttermilk. Give it a shot, replace the orange with vanilla, as I was telling Sari above.
Today baked cake for tomorrow varu’s class diwali party didn’t had much curd at home.Next time will try to make this.But as u said used vanilla and chocolate in the cake.

They liked it a lot smiths but the sugar and butter frosting which i did on the cake became very dry the next day,u know why it became like that??
