Don’t worry – it is a low fat one and I am so delighted with it that I have even had a slice for breakfast 🙂 I am normally, never modify cake recipes unless others who have made the cake suggest modifications. This time, however, I took a chance and experiemented. You see, I was keeping away from baking after all the holiday weight I had put on. Yesterday however, in order to keep Poohi entertained, I made a rather rash promise that we would bake a cake – and she ensured that I did not break my promise- try as I might. So if I had to bake, I decided to bake something low-fat and guilt-free( or atleast less guilty). And here is the recipe in case any of you are interested. I got the recipe from here, but made the following modifications.
- 2 cups all purpose flour
- 3/4 tsp baking soda
- 1/2 tsp salt
- 3/4 cup sugar
- 1/4 cup vegetable oil
- 2 large eggs
- 3 large over-ripe bananas
- 1/3 cup plain fat-free yogurt
- 1 tsp vanilla extract
Preparation:
Preheat oven to 350 degrees.
Spoon flour gently into measuring cups and level with a knife. Stir flour, baking soda and salt together in a medium bowl. Put aside. Place sugar and butter in a large bowl and beat at low speed with a mixer until well blended. Add one egg at a time and blend well after each one. Add in mashed banana, yogurt and vanilla extract, beat until blended. Add flour mixture and blend until just moist. Do not over-mix. Spray an 8 1/2 x 4 1/2-inch loaf pan with nonstick cooking spray. Pour batter into pan. Bake at 350 degrees for 60-70 minutes (until a toothpick inserted in the middle comes out clean). Remove from pan after 10 minutes or so and cool on a wire rack.

At the danger of sounding stupid; I am asking this, it is required to add eggs and oil together ? I have seen most of the eggless cakes recipes have oil in them. I think for that moist cake.
I haven’t the slightest clue, to be honest 🙂 Will check it out. I am no good at eggless cakes. I tried adding oil to avoid using butter and it turned out quite moist and yummy:)

Is it? I started baking properly only about 2.5 years back – when I took a break from work. Give it a shot – try a recipe with lots of good reviews and follow it to a T. – should work 🙂

Yes – the two children in my house – hubby and Poohi – refuse to touch bananas that are ever so slightly yellower than ripe 😦 So I am constantly on the hunt for banana recipes 🙂

Yummy! Thanks for inviting me to tea :D. So it does take 60-70 mins baking time, eh? I had a recipe, somewhat similar but the time was a mere 45 mins and I’d usually end up with half cooked banana bread, wondering what I was doing wrong :(.

i have 4 ripe banana at home which nobody want to eat :-)..so this seems to be perfect utilisation of that 🙂

Somewhere in your recipe, try adding 2 teaspoons of ground roasted flax seeds. Gives a nutty flavour, as well as keeps your HDL cholesterol at a decent high level. (Thats the jhadoo-pochha cholesterol that helps tae away the accumulated plaque). That way, you can always eat one more piece !

This is such an awesome tip. I always wanted to include these flax seeds. But was not very sure about the how part. 😀
Be careful you dont overdo the flax powder as you may be running frequently to the loo. Should be Ok in a biggish cake though.
And make sure the flax seeds are nicely roasted before you grind them. (Raw are difficult to digest). About a couple of flat teaspoons a day is what you can have.
Incidentally this roasted powder with garlic and ground red chillies makes an awesome dry chutney. Can replace garlic with tons of kadhipatta also. But you need to make small amounts at a time, as it spoils easily.
Goes well on salads, and even toast. With curd-rice, it reigns supreme 🙂

All the ladies going ga ga over flax, please ensure that the flax seeds are well roasted. They crackle like sesame seeds when you dry roast them. Thats a sign that you are doing the correct thing.
(flax contains very small amounts of cyanide compounds, especially when consumed raw. Heat, especially on dry flax seeds, breaks these compounds down.)
hence the emphasis on roasting properly.

I have used it a couple of times and it seems to work fine.. What exactly goes wrong when you use curd? I use the fat-free ones we get here. For some reason, that seems to be the ingredient in most cake recipes that use curd..

ok I made it today replaced maida with 1.5 cups of multigrain flour and .5 cup of maida, added a tsp of roasted flax seeds but I used cholesterol free low fat butter and its abs yummy
I think u can surely give it a try with atta 😀
Wow Monika! I will try this out too. I have not tried baking cakes with atta yet. I made orange cake on Saturday with just oil – no butter and it came out yum! But I was in a hurry so tried taking it out before it cooled down properly and it broke 😦 But that did not stop anybody from polishing it off – it was yum!
